Wedding cakes

I’ve been busy making wedding cakes this year and wanted to share what I’ve learnt along the way.

Pumpkin pancakes with chorizo and crème fraiche

Perfect, mouthful-sized, party food. Especially since you can cook them in advance and warm them up before serving.

Pickled chillies

Wickedly good with cheese, divine on any kind of burger or kebab and perfect with Mexican food.

Pistachio macaroons

Lovely pale green macaroon shells sandwiched together with a pistachio buttercream.

Tomato and chilli jam

Sweet, tangy and a little bit spicy – use it anywhere you’d use ketchup (I’m thinking burgers or fried eggs).

Baked eggs

These are Turkish eggs, rather than the Mexican huevos rancheros, so the sauce is headily flavoured with fennel and cumin.

Coconut bread and lime marmalade

This is addictive stuff and a Breakfast Club favourite. Make sure you toast it first for golden flecks of coconut and slather in butter.

An old favourite

This vegetarian shepherd’s pie is hands-down the most popular recipes on the site; several friends have also made it and they always tell me how much they love it.

Chicken and 3-rice salad

This Ottolenghi recipe is downright delicious. The combination of 3 rices, plenty of herbs, spring onions and fried onion makes for a dish bursting with flavour and texture.
