Tomato and chilli jam

Sweet, tangy and a little bit spicy – use it anywhere you’d use ketchup (I’m thinking burgers or fried eggs).

Chickpea and fennel salad

Roasted cherry tomatoes, paper thin slices of fennel and loads of herbs. Happily, it keeps perfectly in the fridge, the extra time gives the flavours time to meld together so it’s perfect for lunchboxes.

A colourful, summery fritatta making the most of the abundant supply of courgettes and sweet and juicy cherry tomatoes at the moment; finished off with a little cheese and a sprinkling of basil.
